coconut hot chocolate. yum.

I love me some Almond Joy candy bars.  That's why when I saw the recipe for coconut tres leches in the November issue of BHG, I had to try whipping some up.  I say try because I'm not so good at "cooking" things that need constant supervision- ask my girls about my grilled cheese disasters.  Yesterday was a half day of school for the littles, so we gave it a whirl...




3 c.     skim milk
1  can unsweetened coconut milk
2/3 c.  unsweetened condensed milk
2 TBSP unsweetened cocoa powder
1/2 tsp vanilla

Mix the three milks in a medium saucepan over medium heat until simmering.  Whisk in the cocoa.  Remove from heat and then stir in the vanilla.  Top with what you love.  Share with who you love.  Enjoy!

Oh--the kids have beautiful eyes. I am off dairy--but I might try a substitution.. perhaps almond milk? hmmmm

I was thinking of adding almond extract... almond milk in place of the skim would probably be super yummy!
