Will you share your recipe for rice pudding? Pretty please? The Teen Queen asks for Cozy Shack rice pudding every time we go to the store -- it would be really fun for her to make!
Sure. I feel like someone who can cook- sharing recipes. :) This is much better than Cozy Shack- I know because that's the kind I buy. :)
3 cups long grain white rice 1/2 cup milk 1/4 cup sugar 1&1/2 teaspoons vanilla extract pinch of salt.
Add rice and milk to medium saucepan and turn on high. Bring to a boil. Lower heat to med-low and simmer for 30-35 minutes. (Until mixture is mostly rice). Stir OFTEN(this is the hardest part of the whole recipe), don't forget to scrape down the sides when stirring.
When milk is mostly gone (no sooner than 30 minutes)- take pan off heat. Stir in sugar,vanilla, and salt. Stir until sugar is dissolved. Pour into a medium bowl. If you don't like the "skin" on your pudding (I do) then you can cover with saran wrap pressing plastic wrap down to top of pudding. Put it in the fridge until well chilled. A few hours. Serves six (or less. lol.)
I LOVE these! They are so great for kids' birthday parties. Another cool idea--a girl I work with is having a "High School Musical" birthday party for her daughter and is turning ice-cream cone cupcakes into microphones! She said she's probably going to have to glob them in frosting. Mmm...all the better!
